The shiitake may handle it ok. Clearly not ideal but if birthed at the right time you should be able to get a nice flush from it.
Bags have a limited use (one time, two at best) so it's obviously more cost effective to fill them as much as practical to justify expense.

If I was to use an oven (dry heat), I would have hydrated the sub (in a bag) with boiling water, then put it in the oven @ 65- 82°C for ±1.5 hours.
