Jerk chicken

    This is one of those foods that i´ve eaten plenty of but never cooked until now. Fresh cut laurel is being used as i have no pimento wood, and if it´s good enough for the Jamaicans, it´s good enough for me.

    The marinade.
    6 scotch bonnet peppers
    6 scallions
    2 tbsp all-spice berries
    6 cloves of garlic
    2" piece of ginger
    2 tbsp fresh thyme
    bay leaf
    zest and juice from 4 limes
    2 tbsp brown sugar
    half cup of soy-sauce
    quarter cup of olive oil
    salt and pepper

    Blend all ingredients to a paste and marinade chicken pieces over-night. Make sure to get lots of the marinade under the chicken skin. Keep a cup of marinade aside for basting the meat.

    Wait until you have white embers on your grill and lay out your laurel/pimento branches on the grill-rack, and place the chicken right on the wood and cook for about 3 hours, turning and basting every 30 minutes. i´m using a terracotta tile on top of the meat to keep the heat in. Feel free to use a big sheet of corrugated tin like your local jerk-shack does :D

    Served with rice and peas and braised cabbage. This was really good! The chicken was moist and full of flavour, and the scotch bonnets were very up-front.... just how they should be. Will definitely make this again soon... after i´ve tried doing jerk-ribs like this :hdrool:

    The best bit is the left-overs... i´m the only one in this house who likes spicy food :hehehe:

    I am making this for dinner, you have infected my brain and have not stopped thinking about jerk chicken. Hopefully eating some will prove to be the cure... At least temporarily.

    Will do. Realized that it has to be marinated (duh) so it won't be tonight, but very soon, got all the ingredients at the grocery store today ;)

    Depends how you look at it... It costs more to eat if they eat it all and you end up having to make more... :cartman:
